Our Diary Co-operative was founded over 50 years ago and is today owned and controlled by 10 individual dairies that produce and supply milk that goes exclusively into the making of Parmigiano Reggiano. One of the major dairies within the vicinity of Parma, we are renowned for the excellence of our produce which has consistently over the years maintained its high quality.

San Paolo Dairy Located in the Parmigiano Reggiano production area the dairy is remarkable for the way the milk, sourced from milk producers that comply with the demands of quality control and hygienic food production, is treated. Cows are fed in accordance with the standards set by Parmigiano Reggiano Regulations. The entire production process, beginning with the way the cattle is fed, the production of milk and the way it is made into Parmigiano Reggiano and the cheese’s ageing, conforms to UNI EN ISO 9001:2000 standards . The Dairy is authorised for the production and ageing of Parmigiano Reggiano wheels and is listed with Det Norske Veritas, registration No. 2256 – 02281 – 97. The Parmigiano Reggiano made by the San Paolo dairy carries the D.O.P. (Denominazione d'Origine Protetta) designation in accordance with the Parmigiano Reggiano Consortium (membership no. PR 2256) regulations, the body that holds the register of certified producers.
